Claudia Knight was born in Torreon, Coahuila. Mexico, and raised in Mexico City. She is married to Russell Knight and has two children, Son, Dr. Ricardo Acevedo, Daughter, Alejandra Acevedo, and Grandson, William Acevedo. From an early age Claudia was involved in all kinds of different businesses. She loves sales and customer service. She has had a Ceramic Studio with 25 employees, where she manufactured ceramics and had workshops on how to paint. She was also certified as a translator, graphic designer, and paralegal. She worked at Canales & Canales Law Firm as the Office Manager and Paralegal. Claudia married Russell Knight in 2003 and started working in his Consulting Business as a Credentialing Specialist. In November of 2020, Claudia started Chiquis Grandma Cuisine because of her passion for baking. It has been a joy but also a rollercoaster due to the pandemic. They added catering services to their business which has allowed them to serve UTEP, Sunflower Bank, Texas Gas Company, Aerospace, Starlight Events, the Camino Real Rotary Club, as well as weddings, quinceanearas, and family gatherings. They are a team of 5 minority women with a passion for baking.
